Thanks for reading and sharing your thoughts. You're right, your PDF issues are 100% a limited RAM issue. I think many of us (myself included) got a bit carried away when M1 launched and made the assumption that somehow unified memory of 8 GB behaves like more than 8 GB. In fact even Apple said somewhere recently that 8 GB on a Mac is equivalent to 16 GB on a PC. In some cases that may be true, but a professional user is bound to run into the situation where 8 GB of memory is exactly 8 GB of memory.
